Exploring the New Coffee Tasting Wheel: Seattle

Peggy and Lauren took a trip to Atlas Coffee Importers in Seattle to learn more about the new SCAA Coffee Taster’s Flavor Wheel.

We had some free time prior to the class starting, so we paid a visit to the Fremont Troll.

After paying our respects to the troll, we strolled around the Queen Anne neighborhood. We stumbled upon El Diablo Coffee and had some delightful macchiatos.

After doing some exploring, we made our way to Atlas Coffee Importers to start our class. Drew led us through the changes to the SCAA Coffee Taster’s Flavor wheel.

It’s an easy to follow, 3 tiered design for the flavors one might find in coffee.

Overall Sweet Lexicon

The wheel is partnered with a well defined and highly specific Sensory Lexicon created by World Coffee Research. One of the areas of the wheel we explored was the sweet section. For Overall Sweet, there are three specific references and their correlating intensities.

After going over the new wheel, we tasted and smelled the references that go along with some of the flavor attributes we explored for the day. These references come have a listed intensity on a scale from 0 to 15. These very specific parameters help create a universal language and understanding during the coffee cupping process.

We had a great time in Seattle and loved all the new information we get to bring back to Hood River Coffee Roasters.
